There is nothing surprising in this decision, because these vegetables are indeed one of the most affordable and easily processed products, which also have a good taste. How to choose and prepare cucumbers
Choosing the right ingredients for preservation is not always as simple a task as it might seem at first glance.
Did you know? Regular consumption of cucumbers prevents the development of atherosclerosis, renal failure and other problems associated with excessive amounts of cholesterol in the human body. However, this applies only to fresh vegetables, since salted ones lose a significant share of their benefits.
However, there are a number of generally accepted recommendations that greatly facilitate this task:
- Give preference to slightly dirty cucumbers, which with all their appearance show that they were not washed. Usually, during this task, the surface of the vegetable is scratched or creased, which is why fermentation processes begin in it that are invisible to the naked eye. From such a cucumber crunch you will not wait.
- You should not buy ingredients for procurement in chain stores, especially if products are supplied to them by foreign companies. Sometimes imported cucumbers are covered with paraffin, which means that with insufficient cleaning, you can get an upset stomach after using them.
- Pay attention to the size of the fruit. The best option for preservation would be greenhouses 7-10 cm long, since most often their internal seeds have not yet fully ripened, which means they will be imperceptible when consuming.
- The color of the fruit plays an equally important role. Fresh and young specimens are always dark green in color and resemble a leaf of cherry. One of the most suitable varieties for pickling are fruits with a light tip or a small number of light strips along the entire surface. The main requirement in this case is the absence of yellow spots on the peel.
- The peel must be delicate and thin in order to quickly absorb brine or marinade. Important! To make it easier to calculate the proportions when preparing the marinade, you can bring the volume of the drained liquid to an integer and add salt and sugar after that. For 5 kg of cucumbers you need about 4 liters of liquid.

- While they are wet, spread the washed greens (horseradish and currant leaves, dill umbrellas), pepper (2 peas and 10 each), garlic, 1 dried bay leaf. You can add a few pieces of dried cloves to this list, but this is only if you like its aroma.
- Arrange the cucumbers on the banks, laying out large copies vertically, and the remaining smaller ones horizontally. The ends of the fruits can not be cut.
- On top of the vegetables laid out, lay out the remaining dill umbrellas and pour everything with boiling water (to the very top).
- After 15 minutes, the water from the cucumbers must be drained into the prepared container, boil it and again pour into banks, leaving for 15 minutes.

- While the mixture is boiling, fill the jar with greens and cucumbers themselves, first laying horseradish leaves (2 pcs.), Dill umbrellas (2 pcs.), Currant and cherry leaves (half of the available amount), followed by garlic, black pepper peas and cucumbers themselves with cut ends.

- Fill the remaining space with cucumbers (to the very edges of the jar) and, if possible, cover the vegetables with another leaf of horseradish, the remains of dill and garlic.
- Pour the workpiece with slightly cooled brine to the very top and close with a tight plastic lid (without seaming). During the day, pickled cucumbers can be in the room, and after the jar has completely cooled down, it is better to put it in the refrigerator or take it out to the basement.

- Tomato fruits also need to be washed, after which make cruciform notches on them and lower them in boiling water for 30 seconds. By sharply cooling the hot tomatoes in a bowl with ice, you can easily remove the peeled back skin.
- Grind the pulp of tomatoes thoroughly with a knife or pass through a meat grinder, which will save a little time.
- Wash and clean the bell pepper, clean all seeds from it and remove the partitions. Cut the vegetable into strips.
- Pour the vegetable oil into the pan, warm it well, and then add the prepared fruits. Following them you need to pour salt, sugar and pour vinegar, and in the end it is worth adding chopped garlic.

How much and how to store workpieces correctly
If the preservation process was carried out in accordance with all the rules and recommendations of a particular recipe, then there should be no problems with the storage of products. On average, it is recommended to eat canned home cucumbers within a year from the moment of their harvesting, but sometimes jars of fruits can be stored for 2-3 years, depending on the chosen method of harvesting (sterilization of vegetables usually extends the shelf life).
As for the storage location of closed cucumbers, it should be a dark and cool room. The apartment can accommodate cans in the pantry, but always away from heating appliances. Violation of this rule threatens to tear off covers and spoil all products. It is better to store cucumbers in their own juice without sterilization only in a cool place, and if there is no basement, then you will have to use a refrigerator, especially if you have only a few cans.
