Spring has not yet arrived, and in the forests of Somogy, residents are already collecting wild onions. This season, compared to previous years, he ascended much earlier - more than a week.
This herb is very popular among local restaurateurs and pastry chefs. Istvan Fodor, a fan of wild onions, from Zhelitskifaludi collects herbs not only for his family, but also for sale. He is convinced that the early plant sprouts this year are associated with mild winters.
Wild onion in different countries has its own name. In Russia it is called wild garlic, wild garlic and a bulb. The most delicious leaves grow at a temperature of +12 ... + 17 ° C.
Istvan Fodor said that wild onions in the country are considered a full-fledged food product, therefore the same requirements for labeling, transportation, etc., apply to it as for vegetables and fruits. For personal use, wild onions in Hungary are allowed to collect up to two kilograms. Anything above this mass requires special permission.
This plant is not only tasty, but also very healthy. Wild onions are a rich source of vitamin C. It lowers blood pressure and blood cholesterol. Fungal infections are treated with onion compresses.
In restaurants and pastries, grass is used as a flavoring agent for various dishes. Chefs at local public establishments actively include onion dishes.
Iapa Gergeli, marketing manager at Kapos Hotel, noted that their guests are looking forward to fresh vegetable dishes in the spring. In early March, hotel guests will be surprised by a snack, hot and dessert with a "bear" onion in the composition.
For many years, it has been used as raw material in the Marton confectionery factory in Balatonlell.
