Joseph Wichu, who lives near Freising, is Germany’s largest breeder of this impressive cattle. In its herd 120 bison, which were considered almost extinct 100 years ago.
“Actually, I didn’t want to work in agriculture at all,” says an experienced butcher and farmer. “I had a super job in the meat industry. But then I decided to take care of the parent farm. ”
But what should the future of the farm look like with its old stable and 30 dairy cows? During a trip to the United States, he had the idea to try to grow bison.
Their meat was rare in Germany at that time and was very much appreciated among gourmets due to its fresh spicy taste, low fat content and valuable ingredients. By the way, one bison can weigh up to 900 kg.
In 1995, the farmer brings the plan to life: he sends the first 60 bison calves from Canada through Paris to Germany. “Anyone who manages to import a herd of buffalo from Canada to Bavaria also finds a way to keep them and sell them in the market,” says Vishu.
But in a van you cannot slaughter a buffalo bull weighing from 600 to 900 kg, and an ordinary slaughter is likely to instantly be in ruins. Therefore, Vishu built his own modern slaughterhouse on his farm. After the bison has matured enough, he sells their meat in his own farm store.
