How to prepare cucumbers
Preparing cucumbers for pickling consists of several simple steps:
- The selection of fruits. Cucumbers should be the same in size (guarantee uniform salting out), fresh, without external damage and traces of mold.
- Pre soaking in cold (preferably icy, water should be changed to colder) as it warms up, for several hours. Optimal - at night. This will give cucumbers elasticity.
- If freshly picked cucumbers taste bitter, then in this case it is recommended to soak the fruits for 1 hour in saline at the rate of 1 tablespoon of salt in 2 liters of water.
- Cutting the ends of the fruit. This is usually a mandatory procedure. Although in a sufficient number of recipes, cucumbers are used without cutting the ends.

- Pour the "second" water into a large pot and cook the marinade. Put spices with salt and sugar. Acetic acid is introduced into the boiling brine gradually, in a thin stream, avoiding the appearance of foam.

A 3-liter jar requires:

- Fill the jar with cucumbers, alternating with greens, hot pepper. The top layer under the lid should consist of leaves, so that when pouring with boiling brine, avoid direct hit of hot water on the cucumbers.
- Pouring "clean" boiling water. Cans with loosely covered lids are kept for 1 hour. Water is poured into a large container; marinade is cooked on its basis.
- Based on the brine recipe, add all components except acetic acid, wait for boiling. Pour vinegar.
- Freshly prepared marinade is immediately poured into jars.
- Close the key, put the bottom up.
If the storage location is a warm room, the amount of vinegar according to the recipe doubles and amounts to 3 tbsp. When using smaller containers, the amount of brine components is calculated proportionally.

With mustard
A very simple way to make crispy pickles.

Important! When buying dry mustard, you should pay attention to the packing date. Mustard powder for preserving vegetables should have a pronounced pungent taste and astringent aroma.
With apples

- After standing the specified time, it is poured into water in a pan, sugar and salt are added. When brought to a boil, the brine fills the volume of the container.
- Thick nylon caps are lowered into boiling water for 10-15 seconds. After they are removed from boiling water, a small amount of vinegar essence is applied to the inside of each lid and the jars are quickly corked.
If you choose the right cap for the size of the neck of the container, the cans will be stored for a long time without the risk of depressurization.

Despite the huge number of described methods for pickling cucumbers, certain rules must be followed, so that the final product does not lose its consumer properties:
- The fruits of pickling cucumbers should be fresh, of the same size, preferably small, with the skin intact. Vegetables will salted evenly and will taste crispy.
- The use of greens, leaves, berries with traces of damage or mold is excluded.
- A container in which pickles are salted is washed with a baking soda solution (1 tbsp. Per 1 liter of water).
