The Peruvian company White Lion Foods over the past three years has been working on a new variety of garlic: Purple Fire.

The color is almost comparable to the color intensity of red onion, and there are no more such varieties on the garlic market, ”says Byron Machuka, sales manager for the company.
Demand for a new variety is high, but it is difficult to expand production in order to satisfy it. Direct speech: “It takes about 6 hours by car from the plant to the field, but there are no paved roads.
So working with this variety is very difficult, and we can only ship small trucks that transport about 4 tons per day. The product is also grown in several small fields, and not in large areas, to adapt to the area.
The great thing about the area, although it’s hard to get it, is that they don’t grow anything else there, so the risk of cross-contamination is really low and we practically do not need to use pesticides.
So far, we are seeing high demand for this variety, but this year we are collecting only about 180 tons, so we do not have much supply, ”Byron says.
Direct speech: “Our market research showed that in Canada there is a great interest in purple garlic, so we expect to enter the Canadian market.
We would like to expand the production of Violet Fire garlic, but the location of the growing place makes it very logistically difficult. But overall, this new variety was really well received, and all efforts to grow it in such a difficult place are rewarded, ”concludes Byron.
Most of the garlic grown in Peru is cultivated in the southern region of the country. This is where White Lion Produce grows garlic, and their main export markets are in Mexico, Brazil, the USA and Australia.
