After Paris and Marseille, a mushroom farm appeared in Avignon, where the association “Les jeunes pousses” just opened the first urban mushroom farm.
After a month of cultivation, this event was marked by harvest. The association grows gray, yellow and pink oyster mushrooms on coffee grounds. Mushrooms grow in a small, moist cellar in the dark, vertically on pylons filled with coffee grounds.
The first mushrooms will appear in just three days. Thus, the company hopes to collect from 200 to 250 kg. mushrooms per month and sell them to people through grocery stores or restaurants.
A dozen restaurant owners are already interested. They also provide free coffee for city farmers.
The Association sees even more prospects in the project of an urban farm in a big city to "create urban agriculture, vibrant, educational and fertile, for Avignon and its inhabitants."
Several farms will be established in the city, which will allow residents to collect fruits and vegetables, seeds, eggs, honey, herbs and compost.
A similar Marcel project, launched in 2017, was a great success: 100 kg. Organic oyster mushrooms are produced per week for more than 30 professional customers. We find them on the map of many restaurants and counters of various grocery stores in the city.
