So, for the preparation of "citrus" fish, you will need the following ingredients:
- 800 g of salmon fillet;
- 2 Sicilian (red) oranges;
- 1 ordinary orange;
- 2 limes;
- 1 bunch of cilantro;
- finely chopped fresh herbs (basil, thyme, parsley, oregano, etc.);
- 1 shallot;
- half finely chopped hot pepper;
- 1 clove of garlic;
- 1 tbsp olive oil;
- 3 tbsp butter;
- 1.5 tbsp brown sugar;
- salt and black pepper to taste.
Wash the fish and dry with paper towels. Wash the zest from one lime, and chop the garlic with a knife or press, then mix it with olive oil, lime zest, brown sugar, salt and pepper.

We spread the fish in a whole piece on a baking sheet. Lined with parchment, grease the salmon with a citrus-garlic mixture. Cut half a lime and an orange into circles and arrange on the fish. Preheat the oven in grill mode and cook fish for about 10 minutes. Readiness of fish assess visually and by smell.
